Experience a tasty journey through the classic Roman pasta with our handy guide to the dishes: Carbonara, Amatriciana, Gricia, and Cacio e Pepe.
All of them are based on Rome’s indigenous cheese, Pecorino Romano. A strong sheep’s-milk cheese, pecorino can be eaten young and fresh, or aged longer until it becomes firm enough to grate.
Cacio e Pepe
is simply pasta with grated pecorino and black pepper. Pronounced “catch-ee-oh ee peh-pay,” the name literally translates to “cheese and pepper,” which is a sophisticated ancestor of today’s mac ‘n’ cheese.
Gricia
takes those ingredients, and adds another classic Roman one: guanciale. A cured pork jowl, guanciale is cubed and rendered in a pan, so that the fat becomes a sauce and the chunks of meats crisp. Funnily enough, gricia is often lighter-tasting than cacio e pepe.
Carbonara
Authentic spaghetti all’ carbonara is perfect in its simplicity. There’s NO CREAM! – the core ingredients shine on their own, with the eggs perform feats of culinary magic and delivering all the creamy character you could wish for. There’s plenty up for debate though: whole eggs versus just yolks. All pecorino or a mix with Parmigiano.
Amatriciana
departs from the previous three’s pecorino-focus. Instead, the base here is tomato sauce, cooked with plenty of rendered guanciale and fat, with pecorino sprinkled on at the end. This dish originated in a hill town outside Rome called Amatrice. This classic sauce takes its spiciness from black pepper or dried chilies.

Pasta Delverde: Two simple ingredients come together to create this high-end pasta: Whole-grain organic matt durum wheat semolina and water.
Eggs for alla’ Carbonara: Quality organic eggs. The general rule is one egg or egg yolk per person. In the original dish, there is NO CREAM in the Carbonara!
Tomato Sauce for alla’ Amatriciana: these tomato sauces are of a native quality of Jon’s Smokery and come from 100% organic cultivation. The product is completely free of preservatives and artificial sweeteners.
Parmigiano Reggiano: The King of Cheeses, for a reason. A complex, granular bite that feels like burst particles of sweet onion grass, cashew, pineapple and lactic acid on your tongue. Shave onto a summer salad as well, to serve with your pasta.
Pecorino Romano: one of the top products in the sector according to Jon’s Smokery. Rich with an assertive tang of umami and salted walnuts; Dense and velvety, almost cake-like; The Roman Emperor of sheep’s milk cloaked in obsidian robes.
Guanciale: Italian salt-cured pork jowl. There is no Carbonara or Amatriciana without a delicious guanciale. The butchery tradition is among the most renowned in Italy and the guanciale produced in Jon’s Smokery is free of chemical preservatives.
Italian Pork Sausage: And when you pair Cacio e Pepe with sausages? Oh my. The richness and cheesiness of the pasta, plus the smokiness of the sausage creates the most stunning umami flavor anyone can ever ask for!
