Providing high quality Salumi (Italian-style home-cured meat) – guanciale, salami, prosciutto, coppa, pancetta, and so on. We expertly blend old world traditions with modern techniques to create new flavor profiles for modern food lovers. We always produce in small batches to ensure our team has full control.
Our products include home-made aged meat and smoked fishes, pasta, bagels and sandwiches to complete our deli selections.

Tired of the same old pasta and sauce? Enter it’s more flavorful, powerful relative. This classic Roman pasta sauce gets its depth from guanciale, Tuscan’s cured pork-jowl, and a kick of heat from fresh chilies, with pecorino sprinkled on at the end. One taste and you’ll never want another red sauce again.
Although each region in Italy has its own twist on the classic, but this basic recipe for Amatriciana sauce (with Jon’s Smokery’s slight variations) should nicely do the trick.

Pasta Delverde: Two simple ingredients come together to create this high-end pasta: Whole-grain organic matt durum wheat semolina and water.
Tomato Sauce for alla’ Amatriciana: these tomato sauces are of a native quality of Jon’s Smokery and come from 100% organic cultivation. The product is completely free of preservatives and artificial sweeteners.
Pecorino Romano: one of the top products in the sector according to Jon’s Smokery. Rich with an assertive tang of umami and salted walnuts; Dense and velvety, almost cake-like; The Roman Emperor of sheep’s milk cloaked in obsidian robes.
Guanciale: Italian salt-cured pork jowl. There is no Amatriciana without a delicious guanciale. The butchery tradition is among the most renowned in Italy and the guanciale produced in Jon’s Smokery is free of chemical preservatives.
